Ingredients

  • pounds ground chuck 80/20 blend
  • 1 large sweet onion sliced
  • 8 oz sliced shiitake mushrooms
  • 3-4 tablespoons butter
  • 2-3 cloves garlic minced
  • Blackstone steak seasoning or your favorite steak seasoning
  • Essential blend seasoning salt, pepper, garlic, onion powder
  • 1-2 tablespoons Worcestershire sauce
  • Additional butter for sauce

Instructions

  • Form the Steaks: Divide the ground chuck into 3-4 equal portions. Shape each portion into square or oblong patties, about ¾ inch thick. Don’t overwork the meat to maintain tenderness.
  • Season the Meat: Generously season one side of each patty with blackstone steak seasoning, making sure to coat the edges. Set aside with seasoned side up.
  • Prepare Vegetables: Slice the sweet onion and prepare the shiitake mushrooms. Mince the garlic and set aside.
  • Cook Vegetables: Heat the griddle to medium-high heat. Add 2 tablespoons butter and cook the onions and mushrooms until caramelized and golden brown, about 8-10 minutes. Season with essential blend seasoning.
  • Add Garlic: In the last 2 minutes of cooking vegetables, add minced garlic to prevent burning. Move vegetables to one side of the griddle.
  • Cook the Steaks: Place the chopped steaks seasoned-side down on the hot griddle. Season the top side while cooking. Cook for 3-4 minutes until a nice crust forms.
  • Lip and Finish: Flip the steaks and cook for another 3-4 minutes until internal temperature reaches 140°F for medium doneness.
  • Make the Sauce: Add any drippings from the steaks to the vegetables. Add Worcestershire sauce and a pat of butter to create a rich sauce.
  • Serve: Place the chopped steaks on plates and top generously with the caramelized onion and mushroom mixture.
